The Hamilton Princess & Beach Club, a Fairmont-managed hotel, has announced that in celebration of Oktoberfest, the world’s largest beer festival, Marcus’ will feature a special menu designed by Austrian Chef Martin Krebs.
The Oktoberfest menu will be available in addition to the standard Marcus’ menu for dinner on October 2 and 3.
In true Oktoberfest style, the special menu will feature various small dishes highlighting Bavarian specialties including ham, dry sausage, freshly baked pretzel and Obatzta spread, Bauernwurst or Weisswurst [white sausage] with sweet mustard and sauerkraut.
Larger plates include Braised Pork Roast, served with sauerkraut, bread dumplings and beer sauce; Pot of German Farmer Sausage, served with black pudding, pork belly, sauerkraut, bread dumplings and cabbage stock; Beef Goulash with Spätzle, served with sour cream; and Veal Schnitzel, served with creamy potato and cucumber salad.
Desserts also echo the holiday spirit with specialties including Apple Strudel, with vanilla sauce; and Kaiserschmarrn [fluffy shredded pancakes], served with stewed plums.
“Oktoberfest is celebrated all over the world and as an Austrian chef, it is one of the holidays that I get most excited for from a culinary perspective,” said Martin Krebs, Sous Chef at Marcus’, Hamilton Princess & Beach Club.
“Bringing an Oktoberfest menu to Marcus’ and the hotel is a chance to showcase some traditional specialties from my home. Ultimately, it is a holiday surrounded with good food and good beer, and that’s not different from what we try and do at Marcus’ everyday!”
