Hamilton Princess & Beach Club has promoted Richard Zuill to the role of Sous Chef for the resort.
A Junior Sous Chef at the hotel since 2018, Mr Zuill, a Bermudian, has gone from strength to strength and has made a name for himself both with guests and colleagues with his exciting and delicious menu additions.
In his new role as Sous Chef, he will oversee the restaurant at the Princess Beach Club on Sinky Bay, offering delicious lunches to guests and members during the season, as well as the incredibly popular Beach Club dinner series. During the off-season he will support Crown & Anchor restaurant.
During his time at the hotel, Mr Zuill had the opportunity to undergo a two week intensive PIT Master Barbecue training course in Austin and Corpus Christi, Texas.
There he received educational background, hands-on teaching and instruction in how to build and use a fire pit. This inspired a love of Texas style barbecue in him and this passion has been reflected in the incredibly popular Zuill’s Barbecue menu offered alternately between the Princess Beach Club and Crown & Anchor.
Mr Zuill, who studied at Bermuda College as part of their Hospitality Management and Culinary Arts programme, has been a chef for ten years after an early start in a sales career. However, he soon realised his true calling lay with cooking, which had long been his favourite pastime.
Previous culinary roles include Sous Chef at Docksiders 2013 until 2015 and Head Chef and Front of House Manager at Beach Bistro and RumBum at Horseshoe Bay and Beach from 2016 until 2018. He also served five years as CPL Medic for the Royal Bermuda Regiment between 2010 and 2015.
